THE SECRETS TO A GREAT TOMATO SAUCE
If you’re like me you love great food.. homemade food, without all those nasty preservatives. Making food at home also makes me feel good knowing I have made something great for my family. I love pasta and a great pasta sauce.
I am a true Italian, so jarred sauce is banned in my house.. especially when making your own sauce because it is so very easy.. You just need the right ingredients to make a delicious tomato sauce for whatever pasta you enjoy…
One of the many ingredients necessary to making a great tomato sauce is using the right tomatoes. Tomatoes are a very important ingredient to making a great tasting sauce so you can’t use just any tomatoes.
Make sure you use San Marzano tomatoes. They are the best!
There are many different brands of canned San Marzano plum tomatoes. If you are lucky enough to have the seeds to grow you own authentic San Marano plum tomatoes, use those.
I usually buy the cans of whole tomatoes. I put them in the food processor for a few minutes to break them down into a rich thick mixture. While they are spinning around, I also add a few large leaves of fresh Basil.
In addition to the usual ingredients like, Ground Beef if your want a meat sauce, Extra Virgin Olive Oil, a few cloves or garlic and some minced onions, there are some other ingredients that really give it a lovely taste.
One of my secret ingredients to a lovely tasting sauce is Nutmeg. It’s a rather obscure ingredient not known to many and not often used. You can buy the fresh nutmeg, which are very small, and very fragrant.
You don’t need a lot for a big pot of sauce. I use about 1 teaspoon for a large pot of sauce.
Fennel seed is indigenous to the shores of the Mediterranean but has become widely naturalized in many parts of the world, especially on dry soils near the sea-coast and on riverbanks.

You don’t need much of this herb.. only about a dozen small seeds will give a wonderful flavour and aroma to your sauce.
Don’t forget a bit of salt the one last ingredient it butter. This will make a rich and creamy sauce with a smooth texture.All you need is about 1/3 cup of real butter.
This tomato sauce can be used with a variety of pasta: Spaghetti, Spaghettini, Linguini, Fettuccini, Ravioli, Tagliaetelle, Penne, Rigatoni.. and for Lasagna as well.
Sauce does not have to take a long time to cook, about 45 minutes is all you need. Turn heat off and let it sit for a few hours and it will thicken up and all the flavours will blend together.
